Quick Recipe

Hello my 5 loyal followers!

This past weekend was crazy busy. My in-laws came to visit and while I love when they are here its always nice to get back on schedule and back to eating right. My in-laws aren't big on eating at home so we eat out almost every meal when they are here. For breakfast Saturday I made chorizo and egg tacos then we went to Cheesecake Factory for an early dinner. Totally blew the "healthy eating" I've been doing. Sunday, Marc made ribs on the BBQ pit along with sausage and chicken. I made rice and beans and guacamole and ranch dip to snack on. Yesterday for lunch before they left we went to Black Eyed Pea. Its our usual lunch before they leave. Well, I ordered a meatloaf patty melt sandwich. The first sandwich had a white hair on it so I sent it back. The 2nd sandwich had another hair in the sauce. Ruined my appetite for the rest of the day. So, for dinner we had leftovers.
I made my husband chicken salad with the left over chicken from Sunday. I didn't take pictures but its super easy and so good. So, here is that recipe. I am cooking something new for dinner tonight so be on the lookout for that! :)

Dill Chicken Salad

1 lb chicken, cooked and shredded (I usually make this as a round two recipe so I use whatever chicken I have)
1/2 white onion, finely chopped
2  tbs honey mustard (not the dressing. This is in the same section as mustard at your grocery store)
2 tbs dill
1 cup mayo (more or less depending on your preference)
garlic powder, salt and pepper to taste

Combine all ingredients and chill for an hour before serving on bread or with crackers. This recipe is so simple but it is absolutely delicious. Also, if I have green onions on hand I like to slice those and add them.
