Easiest Casserole EVER!!

So, I'm all about EASY recipes!! Every once in a while I like a challenge but with a 15 month old to chase after, easier is better!!

So, while on Pinterest I came across this casserole recipe from recipes.com. It was sooo simple!!

Chicken Broccoli Casserole

3 chicken breasts, cooked and shredded
1 bag frozen broccoli, thawed and chopped
1 cup shredded cheddar cheese
1 cup each monterrey jack and colby shredded cheese
2 cans cream of chicken soup
1 cup mayo
Season salt
salt and pepper to taste



First, boil your chicken and shred it. I normally do this ahead of time but since we were out and about during the day, I did it about 30 minutes before I actually wanted to start prepping. 




After shredding, pour chicken in a large bowl. Chop broccoli down into small pieces. I had a pretty large bag of broccoli so I chopped it pretty small. You could of course buy the broccoli already chopped but I just used what I had on hand.


After chopping all of your broccoli, add it to the bowl of chicken. This picture is only a small portion of the amount of broccoli I used. Use as much or as little as you like. Add your 3 cheeses, 1 cup of mayo and 2 cans of soup to the bowl. I also seasoned at this point. We like a lot of seasoning so I used a pretty healthy layer of season salt and pepper. Its savory cooking so you can use as little or as much as you want.



Mix all the ingredients together and decide if you want more cheese or seasonings at this point.


Spread mixture into a lightly greased 9 x 13 pan. Cook at 375* for about 30 minutes.



Serve over rice and enjoy! My husband isn't a big fan of plain white rice so I made a cilantro lime rice that was pretty yummy and added an interesting layer of flavor. I just added the juice of one lime and a handful of chopped cilantro to the rice as it was cooking.
