Stuffed Bell Peppers!

So, growing up my parents made this for us for dinner probably once a month. I love it! You can use whichever color bell pepper you prefer and basically any type of ingredients for the stuffing. This is just the one we used most often growing up!

Stuffed Bell Peppers

Vegetable oil
1 lb ground meat
1 lb ground italian sausage
1/4 c. chopped onions plus some for cooking meat
taco seasoning
2 c. cooked rice
4 bell peppers, tops cut off and seeds removed
1 can black beans, drained and rinsed
1/2 c. frozen corn
1 16 oz jar of salsa
shredded cheese


Preheat oven to 400*. Lightly coat peppers with vegetable oil and roast in a baking dish for about 20 - 25 minutes. I did it for the length of time it took me to make the rice. Remove from oven and allow to cool until you can handle them.



Cook meat with a palmful of onions until completely browned.




In a bowl, add meat, rice, onions, black beans, corn and taco seasoning (as little or as much as you want. I used a palmful). Mix well. Add in salsa and mix well.







Cut the tops off of the cooled peppers and take the seeds and membranes out. Carefully spoon mixture into each pepper and place back in baking dish. Cook peppers 15 - 20 minutes more. Before removing from oven, sprinkle with cheese and cook until cheese is melted.
