A Successful Dinner

So after not cooking very much lately I decided to step up my game (to my husbands satisfaction) and cook a yummy dinner Tuesday night. I was browsing pinterest (go figure) and came across this yummy chicken and asparagus recipe from allrecipes.com. It was DELICIOUS and my husband requested that I make it every couple weeks. Score! And, best of all. Its EASY!!!

Chicken Asparagus Roll Ups

1/2 c. mayo
3 tbl dijon or honey mustard
1 lemon, juiced & zested
2 tsp dried dill or tarragon (I had dill on hand)
1 tsp ground black pepper
1/2 tsp salt
16 spears fresh asparagus, trimmed (We LOVE asparagus so I used about 24 spears and stuffed the roll ups!)
4 skinless boneless chicken breast halves (the pkg I took out only had 3 so that's all I used)
4 slices provolone cheese
1 c. panko bread crumbs (I just eyeballed)




Preheat oven to 475. Grease a baking dish large enough to fit however much chicken you're using. In a bowl, combine the mayo, mustard, lemon juice, lemon zest, tarragon or dill, salt and pepper. Stir until mixture is well combined.




Preheat the asparagus in the microwave for about 1 - 2 minutes. Set aside.

Pound chicken breast until about 1/4 inch thick with a meat mallet. I use a ziploc bag for this. Some like plastic wrap. I am constantly fighting with my plastic wrap to cut it out of the box so ziplog bags are 100 times easier for me!




Place 1 slice of provolone cheese on each chicken breast and top the cheese with asparagus spears.




Roll the chicken breasts tightly and place seam side down in baking dish.




With a pastry brush, apply a coating of the mayo mixture to each chicken breast and sprinkle with panko crums, pressing the crumbs into the chicken to make a coating.





Bake in the oven for about 25 minutes. I served with sauteed asparagus and a pasta side. I served more asparagus because I needed to use it before it went bad. Good thing my hubby & I love it! :)

  3. It was so simple! This week I made a variation with broccoli and cheddar cheese that was just as yummy! :)
