Day 9 - A Recipe

So, today is "a recipe" for the 30-day blog challenge. My best friend, Christine and I talk about we are making for dinner all the time!

So, one of Marc's favorites was this: Pan Fried Meatloaf in TriColor Peppers

1 green bell pepper
1 red bell pepper
1 yellow bell pepper
1 lb ground beef
2 slices white bread, cubed
1 28 oz can crushed tomatoes with basil
2 cloves garlic, minced
1 egg
1 small onion, chopped
1 tlb chopped sage
a few dashes worchestershire sauce
a few dashes hot sauce
salt & pepper
1 tbl oil
veg oil for frying

Preheat oven to 400*

Remove core & seeds from peppers. Slice into 1 inch rings & place baking sheet. You should get about 3 rings per pepper. In a large mixing bowl, mix together beef, bread, 1/2 cup tomatoes, garlic, egg, onion, sage, worchestershire sauce, hot sauce & season with salt & pepper. Press meatloaf evenly into rings. In a skillet over med-high heat, add oil. Saute rings on both sides until golden brown, about 5 minutes per side. Add remaining tomatoes to skillet and back until cooked through, about 20-25 minutes.

I serve with mashed potatoes.
